Old-School BBQ: Tips from a Pit-master

Old-School BBQ: Tips from a Pit-master

Step 1: Preparing the Grill

Start by preparing the grill. Place a good amount of charcoal at the bottom of the grill, forming a mound. Use a charcoal starter to ignite the charcoal. Avoid using flammable chemicals like lighter fluid, as this can affect the flavor of the meat. Wait until the charcoal is well lit and covered with a layer of white ash without flames. This indicates that the ember is hot and ready to be used.

Step 2: Preparing the Meat

While the charcoal is heating up, prepare the meat. Season it with coarse salt on all sides. If desired, you can add other seasonings of your choice, such as pepper or garlic. Remember that coarse salt is the main seasoning for a traditional barbecue.

Step 3: Positioning on the Grill

With the ember hot, spread it evenly in the grill, creating a layer of hot embers. Place the meat on the grill, directly over the hot coals. Make sure to leave enough space between the meat pieces to allow for good air circulation and even cooking.

Step 4: Monitoring and Flipping the Meat

Keep an eye on the meat as it grills. The goal is to create the Maillard Reaction, which is responsible for the formation of a golden and flavorful crust on the surface of the meat. Flip the meat carefully, using barbecue tongs when necessary. Grill each side until it is well browned and has grill marks, which should take a few minutes, depending on the thickness of the meat and your personal preference for doneness.

Step 5: Resting and Cutting

Remove the meat from the grill and let it rest for a few minutes on a cutting board before slicing. This allows the juices to redistribute in the meat, keeping it juicy. Slice the meat into thin slices and serve immediately. Remember that the key to a perfect barbecue is temperature control and cooking time. Use a meat thermometer if necessary to ensure that the meat is cooked to your desired doneness.

Now, enjoy your delicious barbecue and share it with friends and family! The smoky flavor and juicy texture are guaranteed when you follow these steps.
